Rocket, grated cheese, rice, and orange salad

250 g of rice
½ lemon
Salt and pepper
1 handful of rocket
100 g of coarsely grated Parmesan cheese
Segments of 2 peeled skinless oranges
1 red or white onion julienne
Oil, vinegar, and orange zest

Boil the rice in water with the lemon, and salt to taste. Once it is cooked al dente, drain it and cool it down in cold water. Mix it with the cheese, the orange segments and the onion, and season it with oil, vinegar, salt, and orange zest. Serve it over rocket leaves. This is an ideal dish to accompany roasted beef or chicken.
